Thanks to early rains this year mushroom season has really taken off. My good husband has been out in the fields and found lots of fine mushrooms.
The unusual thing is that both the white “gavcar Mantar” (Russula in Enlish) and the really good Islands Mushroom spruce has come at the same time.
This weekend, my husband came home with a good harvest and we had a great feast. I’ve cooked the goodies, both in the traditional Cypriot way and in various other culinary ways. I have preserved some of the small specimens for future enjoyment.
Fry the mushrooms with onions and garlic if you like, salt and a little pepper. Beat a couple of eggs and pour over the finished mushroom mix. Stir until the scrambled eggs have solidified. Enjoy!
